Financier Pastries Years ago I did a portrait business card for Financier's head pastry chef, Eric Bedoucha! Is that why I can't resist his goodies?
Chef Eric Bedoucha of Financier Pastries What should I do? Especially since I've not yet tasted "Le Tropical". Who doesn't love passion fruit raise your hand.

At least I have a remedy for greediness straight from Paris - Oddibil charcoal tablets are specially created for pastry overeaters. I recommend it highly.

Talk about obsessions.
My 1st two days in Paris were spent taste testing chocolate eclairs. I'd read Amy's eclair smackdown and felt some important chocolate eclairs has been left by the roadside - neglected - overlooked...
My idea of a tasting is small amounts of many, rather than large tastes of a few. I began at Fauchon - eclair experts par excellence.
I was a tad disappointed :(
The chocolate icing was fine.
The pastry creme inside -too Sweet for my taste buds.
One down - 10 + to go.

Galeries Lafayette with it's plethora of pastry shops was the next stop and Dalloyau...
This was one of the most chocolatey eclairs sauf La Maison du Chocolat. The pastry creme inside and the icing were a happy marriage in my humble opinion.
Sadaharu Aoki does not offer chocolate eclairs, just Matcha and Sesame.
I have learned to adore his sesame, but not the Matcha - too sweet inside again, but a very pretty looking eclair as eclairs go - and exceedingly nice striations on the sides indeed.
Le Figaro, master tasters of Paris, have deemed patisserie Stohrer owner of the best eclair chocolat.
I do not - too sugary on the pastry creme again. Maybe something's wrong with me, but when I'm in Paris I do not want sugar as a top note. Much as I adore your shop Stohrer I can not concur.
In my opinion the best eclair chocolat resides at La Maison du Chocolat and it's residency is short-lived. Twice I went in the afternoon and all chocolate eclairs were gone gone gone.
Enfin third try lucky and I ate it in the street, just in case someone grabbed it away from me. It met all my expectations. Chocolate of the finest quality was the top note inside and out. Super fresh with a bit of crunch to the biscuity outside = Perfection.
But before I had this La Maison epiphany I had to try...
Thin slices of a few others - Stohrer, Lenotre, Gerard Mulot and an anonymous no-name eclair chocolat. None of them came up to La Maison. I didn't taste test M. Jean-Paul Hevin's chocolate eclair and I have a feeling his would stand up nicely to LMDC. After all they are displayed on the outside of his cookbook, but by this time I could not look another eclair in the face.
Just give me a plain old marshmallow milk chocolate nounours/bear and I will be happy as a clam. In future I'll let Amy do all the smackdowns she wants and keep my thoughts to myself. I learned my lecon. HMPH
BEAR says he's sticking with the religieuse
He can have it.
I'm off chocolate for a while until Thursday at least...

BEAR sends you all a last bisous/kiss from Paris...
It's been such a lovely trip and the weather co-operated perfectly - plein de soleil et pas trop de pluie!
BEAR did not ride a Velib or any other bike malheureusement - too busy running...
BEAR did go to a FAB croissant tasting at Amy's, who didn't know she live in a 'chambre de bonne' once a maid's room. Amy fell in love with all the gorgeous views of Paris...
As one is inclined to do if one lives on the SIXTH floor up in Paris....
Miam-miam!
BEAR was in 7th heaven on the 6th floor...ahem
Carol was in 7th heaven with all the pate de tartiner spreads (caramel au beurre sale, cocoa-honey, noisette, bla bla bla ) she brought along to put on those croissants. Carol forgot to take serious notes in her ummm state of spread-extasy...
Off to meet ex-pat gallerist Grace in Montmartre of galerie Chez Grace.
Grace took BEAR to Cafe des 2 Moulins - Amelie's cafe from the adorable movie on rue Lepic - YUM!
BEAR had quite a full day of eating on Saturday, that ended with a divine home-cooked dinner and delicious cabernet franc from Chateau du Petit Thouars.
MON DIEU!
Our Sunday flight was at 7 PM (or rather 19:10) so we killed time in W.H.Smith admiring bear stickers...
And jam stickers...
A last later run to the Raspail Bio marche...
For some pommes to eat on the plane.
And a gift for our kind hostess, who dreams of eclair seame noir from Sadaharu Aoki - who wouldn't?
The curtain was coming down on Paris pastries for BEAR, as it usually does by 2 o'clock on Sundays in Paris...
At Charles de Gaulle, BEAR cleverly grabbed a salade verte before boarding. AirFrance meals are not what they once were...hmmm
A bit of browsing in the dutyfree is a must is it not?
Especially Eiffel Towers...
BEAR as usual, checks out all the bears - these Fauchon Bears are awfully appealing...
After a smooth AF flight and lots of zzzzzzzs,

Deux eclair, watercolor, 9 x 11
Steph wrote me this morning and inspired today's post,
"chocolate eclair over cake ANY day...in fact, I did so much walking in Paris a couple years ago, I made it a point to eat an eclair a day -
I would walk it off anyway :)
Does it get any better?
True you will have to walk if off in Paris.
and also true you will have to hit all the best patisseries for this diet to be effective, starting here with Sadaharu Aoki and his matcha tea eclair.
Next stop Laduree for an eclair pistache - I must try this. Oh why am I always distracted by the macarons? La Maison du Chocolat has this artfully designed eclair. The once delightful patisserie La Bonniere de Buci had this giant 12" eclair which may well cover 2-3 days or 4-5 people on le regime... Gerard Mulot offers up two flavors at his 6th arrondissement not-to-be-missed neighborhood patisserie. Remember only one-a-day PBers! If eclairs are an anathema to you, why not substitute Angelina's eclairesque macalons. Perhaps two equal one eclair?

You could do yourself a favor and just hangout at Eclair Central. i.e. Fauchon.
It doesn't have to be an 'Eclair Weekend' but certainment, it couldn't hurt...

Particularly for the eclair-obsessed, this is the place for you!
The most inventive eclairs on the planet are at Fauchon, so if you want some variety in your eclair regime Fauchon is the place to go.
