I have only tasted ONE cannele at Patisserie Jean Martin...je le regrete beaucoup...
Only one crepe too...
THREE sable citron (not all at once).
I'm a sucker for anything with lemon on it and this rich buttery cookie has just a thin icing of lemony-ness...
I have had their croissants...
Before I noticed they had mini versions...
Abricot is another flavor I swoon for. Do you too?

Pastry chef, Denis Ruffel has received France's highest honor, the M.O.F. or "Meilleur Ouvrier de France" so this little patisserie is well worth searching out.
I did not get to taste this...
Nor did I buy a 'week-end' cake to take as a gift to anyone...
Foie gras? mais non...
But I would LOVE to eat one of their salades for lunch today...

Le Palmier

French Girl says I do not pronounce "palmier" correctly...
Who cares!? I've been eating 'elephant ears' since I was a kid...
True they don't look much like an elephant's ear...
Nor do they look like a 'pig's ear'...
And what this classic pastry has to do with a "palm tree" is a mystery?
This trip I decided to do serious research on the French palmier - pronounced palm-me-ay or FG's version: "palmi-é"

Patisserie Carette makes a rafinee palmier.
As does this no-name boulangerie...
On rue de Rennes, 75006...
Patisserie Stohrer on 51, rue Montorgueil, 75001 sells golden palmiers...
Paris' best ice cream-maker, Berthillon makes their own palmier.
In the window at Bonbonniere de Buci on rue de Buci, 75005...
There's no way to make a proper palmier without tons of butter...
Le Moulin de la Vierge blasts the fact right on their windows - Dr. Pritikin would have a cardiac infarction on the spot.
This humble palmier comes from not so humble Patisserie Jean Millet on 103, rue St. Dominque, 75007.A mystery palmier, but it looks darn good - crispy, crunchy and thinly delicate. I hope you've gained a bit of visual insight into how a good palmier should look if not taste. Did I eat any of my research subjects you ask? I did not. I've moved on to the chaussons aux pomme (a kind of apple pocket only the French do right.
FYI: you will never find a palmier in a Metro snack dispensers, but there are plenty of madeleines and they aren't half bad!

Bouchon little chocolate cakes I'm late visiting chef Thomas Keller's BOUCHON BAKERY
at 10 Columbus Circle, near 59th Street, third floor.

Bouchon BakeryFor some odd reason I thought they might have Pierre Herme Ispahan knockoffs for me to paint.

But that is Bouley Bakery!

They do have MACARONS!!!
But only in a "medium" size?!
Why?
I like the little/petit ones best - that way you don't feel such a pig eating them :)
These giant-looking chocolate "bouchon" are just the right size!
Only 2" tall and full of molten chocolate...YUM
Remember le bouchon is the word for a Champagne cork and that's how these are shaped.
Very pretty "Cherry chocolate cremoux (?)"
Are there cherries inside as well as on top? Qui sait?
This 1/2 globe is a popular French pastry shape with Herme and others...
My room mate is rescuing me by having this loaf-cake for breakfast!
What I actually ate, after all the browsing...
A plain old ham and cheese sandwich.
But all the bread is made in-house and the baguette is nice and chewy.
Quite Frenchie in my opinion - the bread was buttered as well as mustared like the French do it.
There are informal cafe tables nearby to munch your sandwich..
And for your hound..
There are foie gras–enriched doggie biscuits to keep his mind off your Chocolat bouchon!
