Has this happened to you? You go to the museum (in this case yesterday at the Metropolitan's new exhibit of Haremhab, the Egyptian general who became king) and all you notice is the elegant flat tums!
All you can think is, Oh why did you wolf down those divine chausson aux pommes in Paris?
A tough contest -Between an elegant flat tum or an elegant chausson aux pommes...
Fortunately the first time you went to Des Gateaux et du Pain they were ferme! It was a mardi bien sur...
The flat tum won out that time...
All you got was a sneak peek into the open cuisine doorway...
Miam? 
Or miam-miam? A second visit was more successful...
Les viennoiseries d'or at Des Gateaux are pretty darn irresistable...
And the interiors...
Are so darn elegant...
An Egyptian from Haremhab's time could easily have designed it...
I'd planned on tasting the prize-winning chausson aux pommes (according to Le Figaro) but the chausson aux agrumes (Pâte feuilletée au beurre frais et sel de guérande caramélisée, crème au jus et zeste de citron et pamplemousse) made my heart beat...

Better close your eyes today PBers. You're in for some rough going.Gather your strength for an homage to the lovely golden chaussons aux pommes.
Blame Le Figaro for reminding s of les chaussons many joys. Le Figaro did another one of their superb test des meilleurs. Natruellement I immediatement searched through all pics for Chaussons I've eaten or admired in Paris. I did not come up empty-handed. Do watch the Le Figaro video...et voila!

This no-name/anonymes boulangerie on rue de Rennes...
Who knew to look for chaussons aux pommes at Laduree? Yet they are #9 out of 10 contenders. Go figure?
Boulangerie Des Pains et Des Idees has a rather grand exterior...
This French mommy seems to have filled her poussette with bread. Where is bebe?
The interior of Des Pain etc. is nothing to sniff. Well worth a visit if you like to gawk at antique fixtures. I do.
The viennoisserie look absolutely glorious...

They didn't taste absolutement glorious in my humble opinion. But what do I know? Still I prefer my boulangerie anonymes to Les Pain bla bla. What an annoying name. 
At least Poilane sticks with a two-syllable family name, even if it is unpronounceble to most of us...
Their chaussons aux pommes de chez Poilane look too rustic. I prefer more pomme and less pastry. But what do I know? As Audrey of a Fr. perfume site said yesterday (she was not wearing any perfume!),"You write about cakes and you do not eat cupcakes"

The French are completement fou/crazy for these mini-baker figurines.They are a bit better then Hummel I guess...

Boulangerie de Palmier, original art, 5" x 7"French Girl says I do not pronounce "palmier" correctly...
Who cares!? I've been eating 'elephant ears' since I was a kid...
True they don't look much like an elephant's ear...
Nor do they look like a 'pig's ear'...
And what this classic pastry has to do with a "palm tree" is a mystery?

Adorable patisserie/restaurant, Coquelicot in Montmartre...
Patisserie Carette makes a rafinee palmier. 
As does this no-name boulangerie...
On rue de Rennes, 75006...
Patisserie Stohrer on 51, rue Montorgueil, 75001 sells golden palmiers...
Paris' best ice cream-maker, Berthillon makes their own palmier.
In the window at Bonbonniere de Buci on rue de Buci, 75005...
There's no way to make a proper palmier without tons of butter...
Le Moulin de la Vierge blasts the fact right on their windows - Dr. Pritikin would have a cardiac infarction on the spot.
This humble palmier comes from not so humble Patisserie Jean Millet on 103, rue St. Dominque, 75007.

FYI: you will never find a palmier in a Metro snack dispensers, but there are plenty of madeleines and they aren't half bad!Do you have a fav Paris pastry I should do serious research on?
